BACON & EGG MUFFINS
● 6 eggs
● 100gm diced bacon
● small diced Brown onion
● 2 tbsn self raising flour
● 2 tbsn milk
● grated cheese
● Salt and pepper to tasteBrown onion with bacon in a non stick frypan. In a bowl whisk eggs, add flour and milk, salt and pepper, whisk again.
In a greased muffin tray add onion and bacon mixture evenly, pour in egg mixture sprinkle with grated cheese and bake approx 20-25 min.Freeze separately in snap lock bags. Easy to grab on the go for a snack. Can be eaten hot or cold.
